The pancake has redeemed its place among Finnish gourmet classics. 

The pancake is the best consolation food for darkening evenings, and with this recipe the end result is still particularly delicious. Cardamom goes great as a pair of pancakes and the end result is so good that it doesn’t necessarily need anything on its side – but at least the whipped cream and jam don’t make the taste worse.

This recipe combines the best of pancakes and buns in a user-friendly format. The ingredients are just mixed together and forced into the oven. No kneading the dough or frying it for hours!

Ingredients

50 g butter
8 dl milk
2 eggs
1 dl cane sugar
1 tablespoon vanilla sugar
1 tablespoon cardamom
1 teaspoon salt
1 teaspoon baking powder
4 dl wheat flour

Guide

  1. Melt the butter and allow to cool for a while
  2. Mix the milk and eggs
  3. Mix the dry ingredients together and combine with the egg milk mixture
  4. Add butter and whisk until smooth
  5. Let the dough stand in the refrigerator for half an hour
  6. Pour the dough over the baking paper on a baking sheet and bake at 200 degrees for about 35 minutes
